Champion of Contemporary American Cuisine Joins the Beacon Bar & Grill

The Beacon Bar & Grill in Washington, DC announces that Chef Troy V. Walker has joined its team as the New Executive Chef.
The restaurant is part of the Beacon Hotel at the corner of 17th and Rhode Island.

Chef Troy brings with him a unique background. A graduate of the Culinary Institute of America (CIA), chef Troy brings a love for the fine nuances of American culinary values, where he incorporates seasonal produce into his creations.

Chef Troy has had a most interesting road map leading to his culinary style, directed in part because of his training from world-renowned chefs in California, Las Vegas and New York.

Creating His Very Own Style

This journey has allowed him to create his very own style by pulling from different cuisines and styles of cooking. Chef Troy still credits his sophisticated palate to his grandmother, who always drew inspiration from seasonal produce based on her incredible background as a well traveled wife of a farmer.

At a very young age, Chef Troy's creative culinary edge and creativity was forged through his "hands on" experience, leading him to identify his food as inspired by the freshness of local produce, resulting in what he can best describe as " Fresh Contemporary American Cuisine."

His newly created favorites at the Beacon, such as Sweet Potato Pie and Braised Short Ribs, reflect his passion to serve guests with the best in creativity.

Prior to his move to The Beacon Bar & Grill, Chef Troy was opened two restaurants - Olive's, an Italian-American concept, and The Iron Stone, featuring contemporary American cuisine.

In California, Chef Troy served as Executive Chef at the Mediterranean-influenced Piatti Sonoma, located in Sonoma Valley, where he managed an entire 210-seat restaurant.

Working at the Emeril Lagasse Fish House

In Las Vegas, Chef Troy was honored to have the opportunity to work at Emeril Lagasse Fish House, where he was taught how to prepare Emeril's famous Barbecued Shrimp. Troy said it was "truly inspiring to learn from Emeril."

In Poughkeepsie, New York, Troy worked at Le Pavillion with Chef Claude Guermont. The two years spent with Chef Guermont taught him the honesty, integrity and soulfulness of simple French cooking.
Troy's rural up bringing in western New York on his grandfather's diary farm gave him a sense of community and social awareness that is still with him today. He came to realize that the small day-to-day things can make the largest impact. This trait carries over into his professional life as well, where he counts it an honor and a privilege to use his cooking talents and abilities for charitable organizations when needed.

On Wednesdays, the tradition of "Half Price" wine bottles with dinner will continue, as the Beacon prides itself in having a selection of boutique wines that are not only excellent, but affordably priced.
